Spring Camping Recipe: Cowboy Caviar

One go-to camping recipe my family loves is for Cowboy Caviar. It’s the perfect springtime dish and you can use it as a hearty side dish or even a main dish with an addition or two. Try it – we think you’ll agree it’s the perfect camping recipe for balmy spring and summer nights!

Cowboy Caviar

Ingredients:

  • 3 Roma tomatoes, diced
  • 2 avocados, diced
  • ½ red onion, diced
  • 1 red bell pepper, diced
  • 1/3 cup fresh cilantro, finely chopped
  • 1 15-oz can of black beans, rinsed and drained
  • 1 15-oz can of black eyed peas, rinsed and drained
  • 1 15-oz can sweet corn, drained

For a side dish, serve with tortilla chips. For a main dish, try adding in a package of shredded rotisserie chicken!

Dressing:

  • 1/3 cup olive oil
  • 2 Tbs lime juice
  • 2 Tbs red wine vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder

You’ll also need:

  • Cutting board
  • Sharp knife
  • Mixing bowls
  • Spatula
  • Whisk

Instructions:

  • Prep all veggies: dice tomatoes, avocadoes, red onion, bell pepper, and cilantro. Place everything in a mixing bowl and set aside.
  • Drain and rinse black beans and black eyed peas, drain corn, and add these to the bowl of fresh ingredients. If you are adding rotisserie chicken to this, add it now.
  • Whisk together the dressing ingredients in a smaller bowl and pour this mixture over the veggies. Stir thoroughly.  
  • Refrigerate until ready to serve. Enjoy!
